
South African Oxtail Stew
(Serves 6)
Ingredients:
- 1 ½ kg Ox Tail
- 2 pkt Brown Onion Soup
- 2 Onions
- 4 Carrots
- 2 Tomatoes
- 250g Button Mushrooms
- 500ml Red Wine
- 6 Whole Cloves
- 4 Bay Leaves
- Ox Tail Stock


Method:
- Rub oxtail with brown onion soup powder, salt and pepper
- Brown oxtail and onion in pork lard or beef dripping
- Add stock, red wine, cloves and bay leaves and simmer for 2 hours
- Add tomatoes, carrot, mushroom and simmer for another hour
- Thicken if necessary with brown onion soup, Maizena or flour
- Serve on rice or sweet potato mash
