South African Oxtail Stew

(Serves 6)

  • 1 ½ kg Ox Tail
  • 2 pkt Brown Onion Soup
  • 2 Onions
  • 4 Carrots
  • 2 Tomatoes
  • 250g Button Mushrooms
  • 500ml Red Wine
  • 6 Whole Cloves
  • 4 Bay Leaves
  • Ox Tail Stock


  • Rub oxtail with brown onion soup powder, salt and pepper
  • Brown oxtail and onion in pork lard or beef dripping
  • Add stock, red wine, cloves and bay leaves and simmer for 2 hours
  • Add tomatoes, carrot, mushroom and simmer for another hour
  • Thicken if necessary with brown onion soup, Maizena or flour
  • Serve on rice or sweet potato mash
